Mashed Potato Bake

Serves 4
Ingredients
3 large baking potatoes, peeled and cut into cubes
1 package (10 ounces) frozen chopped spinach, thawed
1/2 cup heavy cream
3 tablespoons butter or margarine
1/2 teaspoon salt
1/2 teaspoon pepper

For the Topping
1/2 cup Italian-style bread crumbs
3 tablespoons grated Parmesan cheese
3 tablespoons melted butter or margarine
1 teaspoon dried parsley

Tips
Mashing Success
For best results, cook potatoes just until fork tender and drain thoroughly. To mash, use a hand masher, a potato ricer, a food mill, or an electric mixer. Be sure not to overbeat potatoes because they will become thick and pasty.


Let this savory two vegetable side dish enhance your dinner menu and cut back on the time you spend in the kitchen.

1. Preheat oven to 375°F. Lightly grease a medium casserole dish.

2. Place potatoes in a medium pot. Add enough water to cover; bring to a boil. Cook until tender, about 20 minutes. Drain and transfer to a medium bowl. Mash potatoes in bowl.

3. Gradually add spinach, cream, butter, salt and pepper to bowl; mix until just combined. Transfer potato mixture to prepared dish; smooth top.

4. For topping, in a small bowl, combine bread crumbs, Parmesan and melted butter. Sprinkle topping evenly over potato mixture. Bake until topping is golden, about 15 minutes. Sprinkle parsley over top. Serve immediately.
