Chicken with cashew nuts

Ingredients

4 skinless, boneless chicken breasts
bunch of spring onions
2.5cm/1in piece root ginger
2 green peppers
2 tablespoons olive oil
100g/4oz cashew nuts
2 tablespoons soy sauce
2 tablespoons sherry
1 teaspoon cornflour
salt and black pepper

Cook’s tip
The key to successful stir-frying is to prepare all the ingredients before starting to cook. Heat the oil until almost smoking before adding the food. Stir the food continuously with a spatula or long wooden spoon.

Serving tip
Egg fried rice and a carrot and spring onion salad make tasty and authentic accompaniments to this oriental favourite.

This classic Oriental dish is tasty and appetizing, and is quick to prepare. Ginger and sherry adds to the excellent flavor.

1 Using a sharp knife, cut the chicken into bite-sized chunks. Trim and chop the spring onions. Peel the ginger and cut into thin matchsticks. Deseed the peppers and cut the flesh into bite-sized chunks.

2 Heat the oil in a wok or large frying pan until almost smoking. Add the spring onions and ginger. Stir-fry over a high heat for 1 minute. Add the cashew nuts and chicken. Stir-fry for 3 minutes, or until chicken is tender. Add peppers. Stir-fry for 3 minutes.
